EDITORS CHOICE
Ayala, based in Ay in the heart of Champagne, has been transformed since Bollinger bought it in 2005 and this nonvintage proves it. This is a balanced blend of 40% Chardonnay, 40% Pinot Noir and 20% Pinot Meunier. The result is crisp while not too dry, and therefore drinkable as an aperitif. Apple and bright citrus combine with green plums to give a fruity wine that is also structured. The cellarmaster continues to reduce the dosage (sugar) so there is a crisp, tight aftertaste.
Wine Spectator Review
Rated 90
A creamy, opulent style, offering honey, apple tart and grapefruit notes, with hints of roasted nut and coffee. This has the structure to stay persistent and fresh, with a crisp, chalky finish. Drink now.
Wine Tasting Notes
Pale gold in color with a fine mousse, the wine is aromatic on the nose. On the palate, it is well balanced and shows great finesse and complexity. Pinot Noir gives the wine richness and a long finish while Chardonnay, from the finest soils of the Cte des Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, mainly from the Marne Valley, gives the wine an appealing fruitiness and roundness. Pinot Noir (45%), Chardonnay (30%) and Pinot Meunier (25%)
